This recipe for “Super Easy Chicken Chili” comes from Andrew Hess. He writes: “I forget where I first learned of this, but it’s incredibly easy and very satisfying. Plus since all you are adding is salsa, it becomes very easy to control the spice level in case you have picky eaters. Served straight from a bowl or over chips for nachos, or however you want. I hope you enjoy!”
INGREDIENTS:
- 2 chicken breasts
- 1 can of corn
- 1 can of black beans (drained)
- 1 jar of favorite salsa
INSTRUCTIONS:
- Add 2 frozen chicken breasts, can of corn, can of black beans (drained) and jar of favorite salsa to crock pot
- Cook on low for 8 hours
- Shred chicken and top with cheese/avacado or whatever
Recipe can be grown or shrunk as needed and makes great leftovers.
